The Czech forward broke the deadlock in injury time in the first half as he chipped the ball above the goalkeeper.
Teammate Florian Wirtz scored to double the gap in the 51st minute at their home, BayArena.
Four minutes later, Freiburg's Vincenzo Grifo scored to pull one back.
Schick went on to score three more goals in the rest of the time, including two headers as Leverkusen secured the commanding win against Freiburg.
Second-place Leverkusen boosted their points to 32 in 15 matches. They keep chase against league leaders Bayern Munich, which have 36 points after a 5-1 win Friday against RB Leipzig.
